A Friday Breakfast...

Hearty delicious-ness this morning.  Orange-Cranberry Oatmeal, one of my favorites.


Orange-Cranberry Oatmeal

 Bring a bit of water (1 cup) to a boil.  Meanwhile, zest an orange peel.  I like a lot of zest, more than a Tablespoon.  Peel and chop the orange.

 Salt the water to taste (1/2-1 teaspoon, for me).  Stir in one cup or so of rolled oats, a small handful of dried cranberries, and the orange zest.

 Cook over medium heat, stirring often, until most of the water is gone.  Remove from heat, stir in chopped orange, and cover.  Let sit for a minute or two.

 Serve with cream or milk.  Sweeten to taste.  This makes two nicely medium-sized bowlfuls, enough for a good breakfast for one, or a light breakfast for two.
